You cannot compare this to streaky bacon they are worlds apart. Aside from being the same cut of meat, the process is very different. The flavours that get added to the pancetta during the cure, then the antibacterial spices we add during the maturation period.
So, this means that we are reducing the water content and adding flavours, the standard bacon gets no real flavours added. Although there is usually a vast amount of saline injected into it to help preserve the product but also to add extra weight!
Our Pancetta has no moisture of any kind coming out of this when you cook it. In fact this pancetta is ready to eat without any cooking. In order to get the most from this delicious piece of meat, render the fat slowly. Doing this will release so much flavour in the process.
If you’re looking for a bold flavour of pork to start a stew or a soup with then this is ideal. It’s not quite as fully flavoured as our Guanciale. However, each have their own place and a best use scenarios.
