It’s not from Spillinga, Calabria in Italy, it’s not exactly nduja… Midlanduja is our rendition, with our wealth of knowledge when it comes to spices and chillies, we are perfectly suited to developing a spicy meat product! This is a moderate heat that has such depth of flavour to it.
Despite coming from humble roots of foods made on a budget to serve the inhabitants of the toe of Italy. One might describe the Italians as having the ability to make good food with poor ingredients. Another person might say that they were culinary geniuses with the ingredients and climate they have.
Nduja has certainly changed from being lower class food to exquisite and higher end, brought to the UK by Francesco Mazzei in the 90’s and popularised over a couple of decades. This is why we felt it would be wrong to replicate Nduja of Spilinga, we could grow Calabrian chillies but the product is still going to be different. Ours is very similar with a tweak to the bitterness of the chillies, we have gone slightly sweeter which gives the finished product a good balance or sweet, spicy, salty and sour.
What is it? Both this and the original Nduja are a spreadable pork salami, being spreadable makes this extremely versatile. It’s something you have to taste to understand it properly.
The best way to get the most from Midlanduja is to open up the flavour profiles by using good quality honey and a little lemon juice. By heating a pan and adding these three ingredients you can simply drizzle it on your pizza, into a pasta dish or what ever you want to add an extra depth of flavour to.
