Lardo - Italian Cured Back Fat

Originating from Colanata in Tuscany, this is a rich, buttery smooth delicacy. There’s many ways to use it, our favourites include rubbing a warm piece of lightly toasted bread with garlic and placing a few wafer thin pieces on top. Or why not freeze a little and then use a microplane grater to season food, just like you would when dusting certain pasta dishes with hard cheese!
