Ingredients

  • 2 Tbsp Olive Oil

  • 1 Onion, finely chopped

  • 2 Garlic Cloves, minced

  • 1 Jalapeño, finely chopped

  • 75g Sobrasada or 150g Chorizo, diced.

  • 400g Canned Chopped Tomatoes

  • 1 tsp Smoked Paprika

  • 1/2 tsp Ground Cumin

  • 4 Eggs

  • 4 Small Tortillas

  • 1 Avocado, sliced

  • 1/4 Cup Fresh Coriander

  • 1/4 Cup Feta Cheese

  • 1 Lime, cut into wedges

Directions

  • Prepare the Sobrasada Base:
Heat olive oil in a large skillet over medium heat.
Add the chopped onion and sauté for 2-3 minutes until softened.
Stir in garlic and jalapeño, and cook for another minute.
  • Cook the Sobrasada:
Add the sobrasada to the skillet, breaking it up with a spoon. Sauté for 2-3 minutes, letting the Sobrasada release its flavourful oils.
  • Make the Tomato Sauce:
Stir in the canned tomatoes, smoked paprika, and cumin.
Bring to a simmer, reduce the heat, and let the sauce thicken for 10 minutes, stirring occasionally. Season with salt and black pepper to taste.
  • Cook the Eggs:
Make four small wells in the sauce with the back of a spoon and crack an egg into each well.
Cover the skillet with a lid and cook the eggs to your preferred doneness (about 3-5 minutes for runny yolks, longer for firm yolks).
  • Warm the Tortillas:
While the eggs cook, warm the tortillas in a dry skillet, directly over a flame, or in the oven.
  • Assemble the Huevos Rancheros:
Place a tortilla on each plate.
Spoon a generous portion of the sobrasada tomato sauce onto the tortillas, making sure each gets an egg.
Top with slices of avocado, crumbled feta cheese, and fresh coriander.
  • Serve:
Serve immediately with lime wedges on the side for squeezing over. For extra heat, serve with your favourite hot sauce.
